TRAINEE GENERAL MANAGER

Duties
We’re looking for someone who takes their job satisfaction from having created a happy, productive team and working environment, as well as a truly fantastic experience for the customer.
To start with:
- Interacting with customers and ensuring high levels of customer service are maintained by all staff
- Helping to maintain appropriate levels of stock
- Cellar management
- Ensuring performance and profitability targets are met
- Maintain robust weekly administrative duties
- Marketing and appropriate advertising as agreed with directors
- Helping to organise events
- Maintain a safe and secure workplace
- Compliance with health and safety, food hygiene and record keeping
- Ensuring staff knowledge of menus and drinks offering
Working towards:
- Meeting profit targets for food and drink sales
- Basic book-keeping and responsibility for till and cash float counts
- Maintaining good relationships with suppliers, current and new
- Staff recruitment and training
- Undertaking regular stock takes and maintaining stock levels
Skills
- Efficient time management
- Project management
- Positive verbal and written skills
- Supportive interpersonal skills
- Attention to detail whilst maintaining a broad overview
Qualifications
Experience:
- Relevant experience in hospitality or retail environments
- Co-ordinating with other team members
- Leadership in a work environment or otherwise
- Experience in using social media and content creation
- Experience with reservation systems and till systems

We have gathered a clutch of awards, but we want more, we want to be better than we have ever been, we want to establish ourselves as a must go to place to eat out in South Wales. We are pushing forward with new menus and a new food vision: fermentation, curing, smoking, pickling, and preserving all feature heavily, but we are driven to explore more techniques and ways to deliver maximum food flavour to the menus. We have a brand-new kitchen arriving later in 2022 equipped with all the tools a creative chef needs to fully explore new techniques and styles of cooking as well as a brand-new on-site microbrewery, smoke house and restaurant re-fit.

Alongside the progression of the new menus, we have an in-house store and bakery selling chef's ingredients, organic foods and real breads made fresh daily. We intend to grow and develop our range of own branded products supplied direct from the kitchen for customers to take home with them setting us further apart from other hospitality businesses in South Wales.
Our ideal candidates will have a real passion for food, passion for exploring new ideas and finding new ways to cook and working with unusual ingredients, an interest in seasonality, baking, experimentation and a willingness to join us on our journey to see where and how far it can take us and our customers.

What the role will look like and how it will develop:
The right candidates will work closely with the head chef and executive chef/owner to formulate the direction and ambition of the new menus, to explore new techniques and ways of working whilst maintaining accurate records and documentation. The team will be small but big in ambition, focused and driven.
There will be a lot of freedom to innovate and develop dishes with the head chef and owner – you’ll be able to develop and put your own style into the dishes.

- A good understanding of the importance of accurate and up to date record keeping
